As I understand it, the corpses should have been butcherable because they would have been wild animals killed in action. Make sure the corpses are not forbidden, and also that the material the butcher's shop is made from is not forbidden. Double-check your Orders screen to make sure you haven't disabled gathering of refuse from outside. Some abilities are not tied to your race, class, or skill-things like particularly quick reflexes that. Geese, capybaras, and eagles should all be large enough to butcher (provided they're wild animals). I had some water buffaloes and a yak calf hanging around my fortress and they died of thirst or hunger or something. I have set Capture Live Animal on the butchers shop, I've made SURE there's a dwarf with the Butcher skill on, but they won't do it. For some reason, my dwarves won't butcher any dead animals.
